Ingredients

500 g Raspberries

2 piece Egg, fresh

70 g Powdered sugar

70 g Flour, Whole wheat

0.5 teaspoons Baking powder

1 slice Butter, unsalted

3.5 dl Sweet cream
Steps

Thoroughly clean the forest fruits, wash them, drain, and store them in the refrigerator. Line a round baking dish with parchment paper and grease it with butter.

Place the eggs and sugar in a wide bowl and beat them with an electric mixer until the mixture is pale yellow and thick enough to leave a trail when a knife is drawn through it. Sift the flour with baking powder into the bowl and gently fold it into the mixture. Mix all the ingredients well, then pour the batter into the baking dish.

Preheat the oven to 190 °C and place the baking dish with the batter in it for about 20 to 25 minutes. When the dough rises, turns golden brown, and starts to pull away from the edges, remove it from the oven. Invert it onto a wire rack, remove the parchment paper, and let it cool.

Whip the sweet cream with an electric mixer and spread it over the sponge cake. Finally, top the cake with fresh fruit. Cut the prepared pie into slices, serve on plates, and enjoy.
