Summer Pasta Salad
When pasta is prepared in a salad, it becomes a delicious meal that fits perfectly even on hot summer days. Especially when mixed with refreshing seasonal ingredients like juicy tomatoes and bell peppers, and seasoned with fresh herbs and lemon juice. This time, orzo pasta was used as the base, which is similar to rice and very pleasant to bite into. If you don’t have orzo on hand, you can also use other small pasta shapes.

250 g Pasta, Macaroni

200 g Tomato, red

2 piece Onion, young

1 piece Bell pepper, yellow, fresh

1 handful Olives, black, in brine

5 pieces Tomato, dried, in oil

150 g Cheese, feta
Steps

Cook the pasta according to the instructions on the package in a large amount of salted water. Once cooked, drain and rinse with cold water.

Clean and wash the fresh vegetables. Cut the bell pepper into chunks or strips, slice the green part of the spring onion into rings, and halve or quarter the cherry tomatoes.

Chop the sun-dried tomatoes into pieces and slice the olives into rings. Rinse the parsley under running water, dry it, and chop it finely.

Transfer the pasta to a bowl and mix it with all the chopped ingredients. Season to taste with salt, ground pepper, olive oil, and lemon juice, and mix everything well. Place the salad bowl in the fridge for a while to cool it down.

Before serving the pasta salad, crumble in some feta cheese and mix it in.
