Summer Vegetable Minestrone
We Slovenians have ričet, while Italians have minestrone. Its a hearty and filling one-pot dish made from various seasonal vegetables that we have on hand during a specific time of the year. Minestrone can also be prepared in advance, as it will taste even better the next day.

2 spoons Oil, olive

0.5 piece Onion, raw

1 piece Green, raw

pieces Carrot, fresh

2 pod Garlic, fresh

2 piece Small pumpkins

pieces Soup base, chicken, cube

2 handfuls Pasta, Macaroni

Steps

Peel the onion and garlic, then chop them finely separately. Clean, wash, and cut all the vegetables into smaller pieces.

Place a larger pot on the stove and heat the oil in it. Add the onion, celery, and carrot, and sauté the vegetables for about 8 minutes, stirring occasionally, until they soften. Reduce the heat to medium to prevent the vegetables from burning.

Add the garlic to the pot and sauté it with the vegetables for 1 minute to release its aroma. Stir in the zucchini, tomato, and bell pepper, and sauté everything together for another 2 minutes. Pour in the broth and add the seasonings (thyme, bay leaf, salt, and pepper).

Increase the heat and wait for the liquid to come to a boil. Then add the beans and pasta to the pot. Once the minestrone boils again, reduce the heat so that the liquid simmers gently. Cook until the vegetables and pasta are completely tender. Add more liquid (water or broth) if needed.

Cut the basil into strips or roughly chop it. Once the minestrone is ready, season it further with salt and/or pepper if necessary. Garnish with basil and grated Parmesan cheese, and serve the prepared dish.
