Sunny Skutina Cake (Styrian Gibanica)
Cakes are part of Slovenian tradition, and diligent housewives prepare them slightly differently in each region. In the past, they were an essential part of celebrations, especially in autumn when crops were harvested from the fields. One of the beloved Slovenian cakes is the Styrian gibanica, which, due to its shape, color, and appearance, has been nicknamed sunny cake.

Ingredients
Dough

1.5 dl Milk, whole milk

1 spoon Sugar, white

0.5 piece Yeast, dry

250 g Wheat flour, white, multi-purpose

1 dl Oil, vegetable oil, canola

1 teaspoon Salt, table
Filling

500 g Cheese, cottage cheese

180 g Sour cream

Steps

First, prepare the dough. Warm the milk until lukewarm. Add sugar and crumbled yeast. Let it sit for a few minutes to allow the yeast to activate.

Meanwhile, sift the flour into a bowl and make a well in the center. Pour the yeast mixture into the well. Mix slightly, then add oil and salt. Knead until you get a smooth, soft, and elastic dough. If the dough is sticky, add a little more flour.

Cover the bowl and let the dough rise in a warm place until it doubles in volume.

Prepare a round baking dish (24 to 28 cm in diameter) in which you will bake the cake. Roll out the risen dough on baking paper. Place it in the baking dish along with the paper, so that the dough extends a few centimeters over the edge of the dish. If it seems too much, simply trim it with scissors.

Mix the filling ingredients well to form a smooth mixture. Pour it into the baking dish lined with dough. Carefully fold the edges of the dough inward.

Prepare the glaze by whisking together the egg, cream, and sugar in a bowl. Slowly pour the glaze over the entire cake using a large spoon.

Bake the cake for about 50 minutes at 180 degrees Celsius. Place the baking dish on the lowest rack in the oven to prevent the top from browning too quickly. If it darkens too fast, cover it with baking paper and continue baking.

Let the baked cake cool until lukewarm, then dust it with powdered sugar, cut into slices, and serve.
