Sweet and Sour Pork

200 g Pineapple, compote

1 spoon Vinegar, red wine

4 spoon Sugar, brown

2 spoons Soy sauce, shoyu, less salt

3 drops Tabasco sauce

2 spoons Ketchup

3 spoons Oil, peanut
Steps

Thoroughly wash the meat and cut it into two-centimeter-thick slices, pound them, cut into cubes, and mix with salt and soy sauce. Let it rest for about half an hour.

Beat the egg, mix it with the meat cubes, and sprinkle with cornstarch.

Heat oil well in a wok or frying pan for frying, and fry the meat cubes for about two minutes. Transfer the meat to a plate, leaving the oil in the wok.

Peel and finely chop the garlic and onion. Drain the pineapple chunks and save the juice. Thoroughly wash the bell pepper, remove the seeds, and cut it into pieces. Peel the carrot and slice it into thin rounds.

Heat two tablespoons of oil in a pan, add the garlic and onion, and sauté until translucent. Add the bell pepper and carrot pieces and sauté for two minutes while stirring. Mix in the pineapple chunks, bring to a boil, and remove from heat.

For the second frying, reheat the oil in the wok or frying pan and fry the meat cubes again for two to three minutes. Then drain the meat.

Reheat the sauce with the bell pepper and pineapple chunks, mix in one tablespoon of oil, and pour it over the meat. Mix everything together.

In a bowl, mix cornstarch with a little water, add the pineapple juice, a tablespoon of vinegar, a pinch of salt, sugar, soy sauce, Tabasco, and tomato ketchup. Mix all these sauce ingredients well, add to the meat and vegetables, and serve on plates.
