Sweet and Sour Soup with Chicken

100 g Mushrooms, shiitake, fresh

2 teaspoons Soy sauce, tamari

1 piece Lemon, fresh, without shell

3 pieces Chili peppers, red chili, fresh

100 g Tofu
Steps

Peel, wash, and finely chop the onion. Rinse the chicken under running water and dry it with paper towels. Then cut the chicken into smaller pieces. Wash and clean the lemongrass stalk. Clean, wash, dry, and slice the shiitake mushrooms into thin strips. Cut the lemon in half and squeeze the juice from both halves. Wash the chili and finely chop it. Cut the tofu into 1 cm cubes.

Pour the chicken broth into a pot and bring it to a boil, then remove the pot from the stove. Lightly crush the lemongrass stalk with a rolling pin and add it to the boiling soup. Add the chicken, curry powder, and onion. Return the pot to the stove and bring the liquid to a boil again. Add the mushrooms and simmer on medium heat for 10 minutes.

Then stir in the sugar and soy sauce into the soup and cook for another 3 minutes, until the chicken is well cooked. Pour in the lemon juice, season with salt and pepper to taste, and remove from heat. Divide the soup into bowls, add the chili and tofu, and serve.

Advice
If lemongrass stalks are not available, they can be replaced with 1 teaspoon of lemongrass powder. If you dont want the soup to be too spicy, remove the seeds from the chili.
