Sweet and Sour Watermelon Salad

Cut the watermelon in half and then into wedges. Remove the seeds from the wedges using the tip of a knife and separate the flesh from the rind with a knife. Discard the rind, cut the wedges into cubes, and place them in a bowl. Wash the lemon well and peel the rind into thin strips using a peeler. Squeeze the lemon juice into the bowl with the watermelon, add the lemon zest, mix well, and let the watermelon marinate in the cold for at least one hour.

Wash the mint leaves under running water, shake them dry, chop them, and add them to the salad. Mix everything well again and serve.

Advice
If desired, you can add a tablespoon of sugar to the salad. Instead of mint, you can use lemon balm, or you can play around with a combination of mint and lemon balm. It is good to serve the salad cold. It is best to use organic lemons, the peel of which is not treated with pesticides. If organic lemons are not available, immerse the lemon in boiling water for a few minutes and wipe it well to remove the wax in which the toxins are found.
