Sweet Bread with Raisins

1 kg Wheat flour, white, multi-purpose

2 spoons Alcohol, Rum

3 dl Milk, partially skimmed

Steps

In a small bowl, prepare the yeast mixture with 2 dl of lukewarm milk, crumble the yeast into it, and mix well with a spoon to dissolve the yeast. Add 1 tablespoon of flour and mix well again. Let the yeast mixture stand in a warm place for at least 15 minutes. Meanwhile, rinse and clean the raisins.

Sift the flour into a larger bowl. In a smaller bowl, crack 2 eggs, add the yolks, rum, lemon zest, sugar, and salt. Mix everything well with a hand whisk. In a larger pot, bring water to a boil and place the bowl with the egg mixture on top to warm it slightly. Stir continuously while heating. Gradually pour the remaining lukewarm milk into the pot and keep stirring. Heat and stir the mixture over the steam until it thickens. Then remove the bowl from the heat and take out the lemon zest.

Add the slightly cooled yeast mixture to the egg mixture and mix well. Pour the entire mixture into the bowl with the flour and quickly mix with a whisk. Melt the butter in a pot, let it cool slightly, then add it to the bowl along with the raisins. Knead everything into a smooth and pliable dough that does not stick to your hands or the bowl. Cover the bowl with a cloth and let it rise in a warm place for 1 hour.

Once the dough has doubled in size, quickly knead it on a lightly floured surface and divide it into several small loaves. Line a baking pan with parchment paper and carefully place the loaves on it. Lightly moisten the loaves, cover them with a warm cloth, and let them rise for an additional 15 minutes.

While the loaves are rising, preheat the oven to 180 °C. Place the baking pan with the loaves in the oven and bake on the middle rack for 45 to 50 minutes until the loaves are nicely browned. Let the baked loaves cool for a few minutes.

Slice the cooled loaves into desired thickness, serve on plates or a platter, and enjoy.
