Ingredients

500 g Nuts, chestnut, fresh

5 dl Milk, partially skimmed

75 g Sugar, brown

1 teaspoon Vanilla, extract, natural

30 g Butter, unsalted

2 spoons Alcohol, Rum

70 g chocolate, dark

125 ml Sweet cream
Steps

Make a cut in each chestnut with a sharp knife. The cut should be deep enough to pierce through the shell but not into the flesh of the chestnut, so it doesn't get soggy during cooking. Place a large pot of water on the stove and bring it to a boil.

Add the chestnuts to the boiling water and cook them for 5 minutes. Then drain and peel the chestnuts. Be careful not to burn yourself!

Place a saucepan with milk on the stove. Add the peeled chestnuts, sugar, and vanilla extract. Bring everything to a boil on high heat, then reduce the temperature and cook in the covered saucepan for 25 minutes. Stir several times during cooking. Be careful not to let the milk boil over.

Drain the cooked chestnuts. Place the chestnuts in a bowl and press them through a ricer. Mix butter and rum into the chestnut puree and press the mixture through the ricer again. Distribute the chestnut puree into dessert bowls.

Melt the dark chocolate in a saucepan. Whip the sweet cream until stiff and add it to the puree, then drizzle everything with the melted chocolate. Serve.

Advice
