Ingredients

250 ml Vinegar, red wine
Steps

Wash the peppers, apple, and chilies. Clean the peppers (remove the stems and seeds) and cut them into quarters. Remove the stems from the chilies, peel the garlic cloves, and peel the ginger. Peel the apple and grate it.

In a food processor, finely grind the peppers, chilies (including the seeds), ginger, and garlic cloves.

Transfer the mixture to a heavy-bottomed pot, and add the tomatoes, grated apple, sugar, and vinegar. Slowly bring the mixture to a boil over moderate heat while stirring constantly. Skim off any foam that forms on the surface. Once the jam boils, reduce the heat and continue cooking, stirring occasionally, until it thickens. To check the consistency, place a small amount of jam on a well-cooled plate, wait for 3 minutes, then push it with your finger. If it wrinkles, it's ready.

Remove the pot from the heat and fill jars with the hot jam. Fill the jars to just below the rim. Seal them tightly, turn them upside down, cover with a blanket, and let them cool slowly.
