Sweet Cinnamon Pull-Apart Bread (Layered Bread)

360 g Wheat flour, white, multi-purpose

In a large bowl, sift 260g of flour and mix it with sugar and salt. In a small bowl, mix the yeast and lukewarm water. Let it sit in a warm place for 10 minutes to allow the yeast to activate.

Place a saucepan with milk and butter on the stove. Heat the contents slowly over low heat until the butter melts. Remove from heat, let it cool to lukewarm, then add vanilla extract and eggs.

Pour the yeast mixture and the milk, butter, and egg mixture into the bowl with the dry ingredients. Mix the ingredients well until they come together to form a rough dough. While kneading, add the remaining 100g of flour. Knead until the dough becomes smooth and elastic. Even though the dough will be quite soft and sticky, do not add more flour than specified in the recipe. Place the kneaded dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for 1 hour or until it doubles in size.

While the dough is rising, grease a loaf pan (23 x 13 x 8 cm) with butter. In a small bowl, mix sugar and cinnamon.

Lightly flour your work surface. Place the risen dough on it, knead it briefly, then cover with a clean cloth and let it rest for 5 minutes.

Roll out the dough into a larger rectangle, approximately 30 x 50 cm. Spread softened butter over it and sprinkle with cinnamon sugar. Using a knife, cut it vertically into six equal strips, then stack them on top of each other. You should have a long strip composed of six layers of dough. Cut this strip into six equal pieces.

Place the dough pieces upright next to each other in the greased loaf pan, cover with a clean cloth, and let it rise for another 40 to 50 minutes before baking.

Preheat the oven to 180°C (350°F). Bake the bread in the preheated oven for 30-35 minutes or until it turns golden brown on top. If it browns too quickly, cover it with aluminum foil or parchment paper.

Once the bread is baked, remove the pan from the oven and let the bread cool in the pan for 20 to 30 minutes. Then, using a thin knife, carefully remove the bread from the pan and serve while still warm. A cup of warm beverage pairs well with it.
