Sweet Milk Braids

Ingredients

30 g Yeast, dry

250 ml Milk, whole milk

120 g Butter, unsalted

First, prepare the yeast starter: pour 1/3 of lukewarm milk into a small bowl and crumble the yeast into it. Add a tablespoon of flour and a teaspoon of sugar. Mix everything well to form a smooth mixture. Place the bowl in a warm spot and let the yeast starter rise for about 15 minutes.

Place a saucepan with butter on the stove and melt it over low heat. Remove the saucepan from the heat and once the melted butter has cooled to lukewarm, mix in the egg yolks, sugar, lemon zest, and spices.

Sift the flour into a larger bowl and make a well in the center. Pour the risen yeast starter into the well. Sprinkle salt around the flour near the well. Pour in the egg-butter mixture and the remaining lukewarm milk, then mix the ingredients to form a rough dough. Transfer the dough to a floured work surface and knead until it becomes soft and pliable. Shape the dough into a ball, cover it with a clean cloth, and let it rise until it doubles in size.

Quickly knead the risen dough, then divide it into pieces weighing about 120 grams each. Cut each piece into six parts and roll them into approximately 20-centimeter-long strands. Take three or six strands and braid them together to form round braids. Place the braids on a baking sheet lined with parchment paper. Cover the braids with a cloth and let them rise for 30 minutes.

While the braids are rising, preheat the oven to 200 degrees Celsius. Before baking, brush the braids with beaten egg and generously sprinkle them with poppy seeds and almond flakes. Bake them in the preheated oven for 15-20 minutes, or until they turn golden brown and are nicely baked.
