Sweet Mummies

Ingredients
Cookies

150 g Flour, Wheat, bread flour

45 g Cocoa, powdered, unsweetened

1.25 teaspoons Baking powder

150 g Sugar, white

120 ml Milk, whole milk

80 ml Oil, plant, sunflower

120 ml Water

Steps

Preheat the oven to 180 degrees Celsius. Place paper liners in the muffin tin.

In a bowl, sift the flour, cocoa, baking soda, and salt. Add sugar and mix the ingredients well. Then add oil and milk and mix until you get a uniform batter, into which you mix the beaten egg. Finally, pour in hot water and mix the batter well one last time.

Fill the paper liners in the muffin tin with the prepared batter, which is quite runny, up to 2/3 full. Bake the cookies in the preheated oven for 18-22 minutes. They are done when a toothpick inserted into the center of a cookie comes out clean.

Remove the muffin tin with the baked cookies from the oven. Let the cookies cool in the tin for 10 minutes, then transfer them to a wire rack to cool completely.

Meanwhile, prepare the royal icing to decorate the cookies. First, beat the egg white on the highest speed for about 3 minutes until it becomes slightly frothy. Add sifted powdered sugar and mix until the sugar dissolves and the mixture becomes very thick, similar to a white cream. You can add a bit of lemon juice for flavor and freshness.

Transfer the royal icing into a piping bag. Pipe it onto the cooled cookies to create cute mummies (see picture). Use colorful chocolate candies for the eyes, attaching them to the cookies with the help of the royal icing. Wait for the icing to set, then arrange the cookies on a large plate or platter and serve the prepared dessert.

Advice
Instead of hot water, you can use black coffee or dissolve 1 teaspoon of instant coffee in the water.
