1 kg Sweet potato

60 g Butter, unsalted

Peel the sweet potatoes and spinach, wash them, and cut them into smaller pieces. Thoroughly wash the coriander and finely chop it. Peel the onion and also finely chop it. Place a pot with one and a half liters of cold water on the stove. Add the sweet potato and spinach pieces, bring to a boil, then simmer the vegetables for another 12 minutes.

Meanwhile, place a small pan on the stove and heat the butter. Add the onion and sauté it over moderate heat for about 4 minutes. Add the ground and chopped coriander and sauté for another minute.

Mash the sweet potato and spinach pieces into a creamy puree, then mix in the onion and coriander mixture. Season with salt and pepper to taste and serve on plates.
