Ingredients

5 pieces Egg, fresh

125 g Sugar, white

1 bag Sugar, white

125 g Wheat flour, white, multi-purpose

1 teaspoon Baking powder

200 g Cooking chocolate, unsweetened

125 g Butter, unsalted

1 pinch Salt, table

200 g Nuts, hazelnuts

200 ml Sweet cream

1 bag Baking powder

pieces Sugar, turbinado
Steps

Line a deep baking tray measuring 30 x 40 cm with baking paper. Preheat the oven to 180 degrees Celsius. Coarsely chop the chocolate and place it in a heatproof bowl. Add butter and salt to the bowl and melt everything together in a water bath (see tips). Once the chocolate and butter have melted, remove the bowl from the heat and let the mixture cool slightly.

In a new bowl, crack the eggs and whisk them until frothy with an electric mixer. Mix in regular and vanilla sugar. In another bowl, mix the flour with baking powder. Sift the flour into the egg mixture and mix everything together at low speed until you get a smooth batter without lumps. Then mix in the melted chocolate and finally the ground hazelnuts.

Pour the batter into the baking tray and spread it evenly. Place the tray in the preheated oven for 20 to 25 minutes.

Turn the baked sponge cake onto a kitchen rack lined with baking paper. Let the cake cool completely, then remove the baking paper. Cut triangles from the cooled cake with a slightly rounded bottom side (see picture). You can use a cardboard template to help with cutting.

Whip the cream together with the stabilizer until stiff. Fill it into a piping bag. Arrange the cut triangles on a clean kitchen surface. Pipe small mounds of sweet cream onto one corner of the triangles to create a hat. Use various sugar gels to draw eyes, nose, mustache, and mouth.

Serve the prepared sweet St. Nicholas treats on a large plate or platter and enjoy.

Advice
A water bath is used for melting and dissolving delicate foods and ingredients or for frothy mixing (especially for preparing various sauces and creams). Place a heatproof bowl with ingredients over another bowl with hot water and whisk the ingredients in the upper bowl until they thicken and foam. The water in the lower bowl should not boil vigorously! If you dont have sugar gels for decoration, you can use egg whites mixed with powdered sugar. Divide the thick egg white mixture into several parts and mix in any food coloring.
