250 g Wheat flour, white, multi-purpose

4 spoon Powdered sugar

1 bag Sugar, white

1 pinch Salt, table

100 g Butter, unsalted

4 spoon Juice, lemon

Preheat the oven to 180 degrees Celsius. Line a baking tray with parchment paper.

Sift the flour and powdered sugar into a bowl. Add salt and vanilla sugar and mix the ingredients well. Sprinkle the butter pieces over the mixture. Use your fingertips to rub the fat into the dry ingredients, lifting the mixture to create a crumbly texture. Add four tablespoons of milk and quickly knead everything together to form a smooth and slightly firm dough. If it's too dry, add a little more milk.

Roll out the dough on a lightly floured surface to a thickness of 5 mm. Use a round cutter (like a glass) to cut out circles, approximately 9 cm in diameter. Place the circles on the baking tray and bake in the preheated oven for 8 to 10 minutes. They are done when they turn golden brown on top and slightly darker around the edges. Carefully transfer the baked cookies to a wire rack and let them cool completely.

Drain the apricot halves and place them on a plate lined with paper towels. Let them drain well. In a small bowl, mix the powdered sugar and lemon juice until smooth. The mixture should be thick - if it's too runny, add a little more powdered sugar.

Spread the cooled cookies with the sugar mixture and top with apricot halves. Wait for the sugar mixture to set on top, then arrange the cookies on a large platter and serve.
