Swiss Chard and Potato Patties
A great way to use up Swiss chard and perhaps even inspire the youngest eaters. The patties can be served as a side dish, or you can enjoy them on their own, for example with a yogurt or tomato sauce.

700 g Swiss chard, fresh

1 piece Onion, raw

2 pod Garlic, fresh

2 twigs Parsley, fresh

500 g Potatoes, white

40 g Cheese, Cheddar

30 g Cheese, Parmesan, grated

2 piece Egg, fresh

60 g Flour, Wheat, bread flour

Steps

Finely chop the Swiss chard, especially the stems. If the pieces are too large, it will be difficult to shape the patties. Place it in a large bowl.

Finely chop the onion, mince the garlic and parsley, and grate the cheese, then add everything to the Swiss chard.

Peel the potatoes, grate them finely, squeeze out the excess moisture, and add them to the Swiss chard as well.

Mix the ingredients in the bowl with all the other ingredients, namely the eggs, flour or breadcrumbs, salt, and pepper.

Shape the mixture into balls, the size of a tennis ball, then flatten them.

Heat oil in a pan. Once hot, add the patties and cook them slowly over medium heat. Cook them for 6 to 8 minutes on each side, depending on their thickness.
