Ingredients

3 twigs Parsley, fresh

4 twig Thyme, raw

40 dag Sweet potato

1 piece Okra

1.5 dl Milk, whole milk

1 spoon Butter, unsalted

5 pieces Tomato, dried, in oil

5 dag Pine nuts

20 dag Cheese, cottage cheese

5 dag Cheese, Parmesan, grated

2 pinch Salt, table

2 pinch Spices, pepper, black

1 pinch Spices, nutmeg, ground

2 spoons Butter, unsalted
Steps

Thoroughly wash the parsley and chives, shake them off, and finely chop them. Peel the potatoes, wash them, and cut them into larger pieces. Place them in a sufficiently large pot and cover with an appropriate amount of cold water. There should be enough water to cover all the potatoes. Salt the water, then cook the potatoes over moderate heat for about 20 minutes.

Drain the potatoes, add milk and butter, then mash them well with a potato masher. Mix the chopped herbs into the mashed potatoes. First, cut the Swiss chard leaves from the stalk, and further thin the thick veins with a sharp knife. Place a pot with two liters of salted water on the stove and wait for it to boil.

Blanch the leaves in the salted boiling water for about 2 minutes, then immediately rinse them under ice-cold water and dry them. Cut the tomatoes into pieces. Place a Teflon pan on the stove and quickly toast the pine nuts without fat until they turn golden brown. Then chop them into small pieces.

In a separate bowl, mix the cottage cheese and Parmesan until smooth, then add them along with the other ingredients (pine nuts, tomatoes) to the mashed potatoes. Season the mash to taste with salt, pepper, and nutmeg, then mix well again.

Preheat the oven to 180 degrees Celsius. Spread the Swiss chard leaves on a clean work surface and place about 2 heaped tablespoons of filling in the center of each leaf. Roll the Swiss chard leaves into rolls, tucking the ends inward so they don't unravel. Arrange the Swiss chard rolls in a greased baking dish and top with pieces of butter.

Place the baking dish in the preheated oven for ten minutes. Then remove the dish from the oven, serve the rolls on plates, and accompany with your chosen side dish.
