In a pot, bring 300 ml of water to a boil. Pour the bulgur into a bowl and cover it with the boiling water. Cover the bowl and let it sit for about 30 minutes, allowing the grains to absorb the liquid and soften.

Wash the tomatoes, remove the stems, and cut them into smaller pieces. Peel the cucumber and onion, then finely chop them. Finely chop the mint and parsley as well, then combine all the ingredients in a large salad bowl.

Drain and dry the bulgur if necessary. Add it to the other ingredients in the bowl, then mix everything well. Season the salad with salt, lemon juice, and olive oil.
