Tagliatelle with Shrimp, Asparagus, and Cream

250 g Pasta, Macaroni

2 spoons Oil, olive

1 piece Shallot

450 g Asparagus, fresh

450 g Fish, shrimp

1 pod Garlic, fresh

1 handful Tomato, red

250 ml Sour cream

pieces Lemon, fresh, without shell

Quickly rinse the vegetables and shrimp tails under running water and dry them. Snap or cut off the woody ends of the asparagus (you can use them to prepare a soup base), then cut them into smaller pieces. Peel the shallot and garlic, then finely chop them separately. Halve or quarter the tomatoes.

Place a large pot of salted water on the stove for cooking the pasta. Add the tagliatelle to the boiling water and cook according to the manufacturer's instructions.

While the pasta is cooking, heat oil in a deep pan and quickly sauté the chopped shallot. Add the asparagus and sauté with the shallot for 2 minutes, then stir in the shrimp, chopped garlic, and tomatoes. Sauté everything together for another 2 minutes, then pour in the cream. Season the sauce to taste with salt and white pepper, and optionally add a bit of lemon juice and/or grated zest. Let the sauce simmer on medium heat for 5 minutes.

Once the tagliatelle is cooked, drain it and mix it into the sauce. If the sauce seems too thick, thin it with a bit of the pasta cooking water. Serve the prepared dish on plates and enjoy immediately. Optionally, sprinkle some grated Parmesan on top.
