Tagliatelle with Tomato Sauce and Chickpeas
Instead of tagliatelle, you can use spaghetti, penne, or any other type of pasta. To make the meal even healthier and more nutritious, replace regular egg pasta with whole wheat, rice, or quinoa pasta.

30 ml Oil, olive

1 piece Onion, raw

3 pods Garlic, fresh

800 g Tomato sauce, without salt

400 g Chickpea, cooked

2 twigs Basil, fresh

1 twig Spices, oregano, dried

0.5 teaspoons Salt, table

Steps

Peel the onion and garlic, then finely chop them separately. Drain the chickpeas from the can, rinse them under running water, and let them drain well. Rinse the basil and oregano under running water if needed and shake them dry. Remove the leaves from the stems. Save a few leaves for garnish and roughly chop the rest.

Heat olive oil in a large pan and sauté the onion, stirring occasionally, until translucent. Add the garlic and cook for another minute while stirring. Then add the canned tomatoes and drained chickpeas to the pan. Pour in a bit of liquid (water or broth), mix well, and season with salt and freshly chopped herbs. Bring the sauce to a boil, then reduce the heat and let it simmer for 10 to 15 minutes.

While the sauce is cooking, bring a large pot of water to a boil for the pasta. Just before the water boils, add salt to increase the boiling point. Add the tagliatelle to the boiling water and cook for 1 minute less than the time indicated on the package.

Drain the cooked pasta and add it to the pan with the sauce. Mix well, cook for another minute, and then remove from heat. Serve the prepared pasta on plates, garnish with the reserved herb leaves, and serve. Optionally, add a spoonful of sour cream or burrata and serve the dish.

Advice
Burrata is a fresh Italian cheese that is similar to mozzarella on the outside but creamy and liquid on the inside. If you like it spicy, you can add a bit of chili (fresh or dried) to the sauce.
