Tapenade
This spread made from olives, capers, anchovies, olive oil, and lemon juice can be smooth or coarsely chopped. It is adorned with the flavors of the Mediterranean!

Ingredients

300 g Fish, sardines in oil

100 g Olives, black, in brine

150 g Olives, green, in brine

3 spoons Carp, soaked

1 pod Garlic, fresh

2 spoons Juice, lemon

0.5 bouquet Parsley, fresh

0.2 teaspoons Spices, pepper, black

4 spoon Oil, olive
Steps

Thoroughly drain the black and green olives. Rinse the capers under running water and dry them. Wash the parsley and shake it dry, then peel the garlic. Place the black and green olives, garlic, capers, parsley, and anchovies in a food processor. Quickly pulse everything together. Be careful not to over-process, as we do not want a smooth mixture.

Add a little olive oil and lemon juice and quickly pulse again with the food processor. Then transfer the mixture to a serving dish and season with salt and pepper to taste. Mix well, garnish with an olive and a sprig of parsley, and serve.
