Tarte Tatin with Currants and Vanilla
Tarte Tatin is a famous French dessert that is said to have been created by accident. Tarte in French means cake, and Tatin is the surname of two sisters who once accidentally caramelized apples while preparing an apple pie. They then placed dough over the apples, baked it, flipped it upside down, and the famous "cake" was born, which is still served in the best restaurants today.

1 kg Apples, rose

100 g Red currant, fresh

3 spoons Sugar, white

Steps

Grease a round pie mold (24 cm in diameter) well with butter. Wash the apples, clean them (remove stems and cores), and cut them into eighths. Place the sliced apples in a large bowl, add sugar, lemon juice, and currants.

In a small saucepan over low heat, slowly melt the butter, then add the vanilla seeds. Pour the melted butter along with the seeds into the bowl with the fruit. Gently mix everything together with your hands.

Place the fruit in the greased mold (the fruit can extend above the rim of the mold, as the apples will shrink significantly during baking). Place the mold in the oven preheated to 180 degrees Celsius for 35 minutes.

Unroll the puff pastry, then cut out a circle slightly larger than the mold. Prick the pastry circle in several places with a fork and sprinkle with powdered sugar. Place it over the baked fruit. Reduce the temperature to 170 degrees Celsius and bake the tart for another 30 minutes.

Once the pastry is beautifully golden brown, remove the mold from the oven. Let the tart cool slightly in the mold.

While still warm, carefully flip the tart onto a large plate (serving platter) and cut into desired-sized pieces. Serve the pieces on plates with a dollop of cold whipped cream or a scoop of vanilla ice cream.
