Ingredients
Marinade
-
60 ml Soy sauce, shoyu
-
3 spoons Sugar, brown
-
pieces Juice, lime
-
pieces Lime, fresh
-
1 piece Chili peppers, red chili, fresh
-
pieces Ginger, fresh
-
2 spoons Oil, vegetable oil, canola
-
3 pods Garlic, fresh
-
pieces Salt, table
-
800 g Meat, chicken, thighs
-
pieces Coriander, leaves, fresh
-
pieces Lime, fresh
Steps
-
Wash the chicken, dry it well with paper towels, and cut it into approximately 1 cm pieces. Wash and clean the chili (remove the stem and seeds). Cut about 2/3 of it into rings, and save 1/3 for later. Peel and finely chop the garlic. Peel and finely grate the ginger.
-
In a large bowl, mix the soy sauce, sugar, lime juice and zest, garlic, ginger, oil, and the chili rings. Once the sugar dissolves, taste the marinade and add a little salt if desired. Add the chicken pieces to the bowl and mix well with the marinade. Cover the bowl and refrigerate for 4 hours to allow the chicken to absorb all the flavors.
-
Thread the marinated chicken pieces onto wooden skewers. Heat a little oil in a large pan and cook the skewers over medium heat. Turn them during cooking to ensure the chicken pieces are nicely browned on all sides.
-
Finely chop the remaining chili and wash the cilantro, shake it well, and roughly chop it. Serve the cooked skewers on plates, sprinkle with chili and cilantro, and serve with a side of your choice and lime wedges.
