Thai Omelette
An egg omelette with an exotic combination of ingredients, originally called khai yat sai. All ingredients are essential - even the seemingly unusual fish sauce, which interestingly combines its flavor with the taste of fried pork during cooking.

Ingredients

3 pieces Egg, fresh

1 pinch Spices, pepper, white

2 piece Onion, young

1 pod Garlic, fresh

0.25 cups Beans, fresh

1 piece Tomato, red

80 g Meat, pork, ground

1 teaspoon Fish sauce

1 teaspoon Sugar, white

1 teaspoon Vinegar, red wine

2 twigs Coriander, leaves, fresh

3 spoons Oil, plant, sunflower
Steps

Wash the onions and finely chop them. Peel the garlic, crush it with a knife, and chop it. Wash the tomato, cut it in half, remove the green part, take out the seeds, and finely chop it.

Heat a tablespoon of oil in a pan, add the onion and garlic, and fry for a few minutes while stirring until the onion lightly browns. Add the pork and fry everything together for 5 minutes. Stir occasionally. Add the peas, tomato, and the remaining ingredients. Stir and cook for 10 minutes. If the mixture becomes too dry, add a tablespoon or two of water. Transfer the prepared mixture to a plate, shape it into a mound, and keep it warm.

Wash the coriander, shake it dry, and chop it. Crack the eggs into a bowl and whisk them well with a whisk. Add pepper and salt. Place a pan on the stove and pour in two tablespoons of oil. Wait until the oil becomes very hot, but be careful not to let it start smoking. Pour the egg mixture onto the hot oil and sprinkle it with coriander. When the edges of the omelette set, spread the meat-vegetable mixture over the omelette and cook everything together for a few more minutes.

Remove the pan with the prepared omelette from the heat. Carefully transfer the omelette to a large plate, cover it with another plate turned upside down. Carefully flip the plates, remove the top plate, and serve the omelette.
