Ingredients

Juice two limes and grate the zest of one of them. Peel and finely chop the garlic. Peel and finely grate the fresh ginger root. Wash the chili, remove the seeds, and finely chop. Thoroughly wash the lemongrass and cilantro, and finely chop them. Combine all the ingredients in a bowl, add sesame oil and a glass of white wine. Mix the marinade ingredients well.

Wash the fillet, remove any bones, and dry it with kitchen towels. Cut it into bite-sized pieces. Thoroughly wash the zucchini and also cut it into pieces. Place the fish and zucchini pieces in the marinade and mix well. Cover and refrigerate for one hour. Meanwhile, thoroughly wash the lemon and cut it into small pieces.

Light the charcoal, heat the grill, and lightly oil the grill grate. Alternately skewer the fish, zucchini, and lemon pieces onto wooden or metal skewers, adding bay leaves as well.

Advice
