The Best Roasted Potatoes

Ingredients

1 kg Potatoes, white

100 ml Oil, olive

2 teaspoons Wheat flour, white, multi-purpose

Steps

Set the oven rack to the middle height, turn on the oven, and set it to 200 degrees Celsius. Place a suitable-sized baking dish into the cold oven and let it heat up along with the oven.

Peel, clean, and wash the potatoes. Cut medium-sized potatoes into quarters, and smaller ones into two or three pieces (each piece should be about 5 cm in size). Place the potatoes in a pot and cover them with enough cold water to fully submerge them. Place the pot on the stove, add salt, and bring the contents to a boil over medium heat.

As soon as the potatoes come to a boil, reduce the heat so that the water simmers gently and cook the potatoes for exactly 2 more minutes. While the potatoes are cooking, take the hot baking dish out of the oven and pour olive oil into it. Place the dish with the oil back into the heated oven.

Drain the potatoes in a colander and let all the water drain out. Shake the colander a few times, then sprinkle flour over the potatoes. Shake the colander once or twice more to evenly distribute the flour over all the potato pieces.

Take the hot baking dish with the oil out of the oven and carefully transfer the potatoes into it. Shake the dish gently a few times to coat the potato pieces with oil, then spread them out in a single layer on the bottom of the dish. Place the dish with the potatoes into the heated oven for 15 minutes. After 15 minutes, take the dish out of the oven, stir the potatoes, and bake them in the oven for another 15 minutes. Then take the dish out of the oven again, stir the potatoes, and bake them in the heated oven for another 20 to 30 minutes, or until the outside is nicely crispy.

Season the roasted potatoes with salt before serving, and optionally with freshly ground pepper. Serve them while still hot.

Advice
