Thick Chickpea Soup
Creamy, thick, nutritious, and aromatic soup is an excellent choice for cold days that call for a bowl of warm soup or a one-pot dish to warm up a chilled body. Since it’s prepared in just 20 minutes, it’s perfect for a quick meal after a long day at work or an afternoon walk. Serve it with garlic bruschetta or garlic bread for a complete meal.

Ingredients

1 spoon Oil, olive

6 pods Garlic, fresh

1 twig Rosemary, fresh

4 can Chickpea, cooked

3 l Soup base, chicken, cube

pieces Salt, table

Steps

Peel the garlic and finely chop it. Drain the chickpeas in a colander and rinse them under running water. Let them drain.

Pour olive oil into a large pot and quickly sauté the garlic and a sprig of rosemary. As soon as the garlic starts to change color (be careful not to let it brown!), add the chickpeas to the pot. Pour in the broth and season with a pinch of salt and ground pepper.

Wait for the broth to come to a boil, then reduce the heat to medium and let the soup simmer gently for 15 minutes.

Remove the rosemary sprig from the pot. Blend the soup until smooth using an immersion blender, then stir in the lemon juice. If the soup is too thick, thin it with a little water or broth. Adjust the seasoning with more salt and/or pepper if needed.

Serve the prepared soup in deep bowls or soup cups. Drizzle with olive oil on top and serve with bruschetta or garlic bread.
