Ingredients
-
400 g Pasta, noodles, fresh
-
pieces Salt, table
-
20 g Butter, unsalted
-
1 piece Shallot
-
4 dl Sweet cream
-
100 g Fish, salmon, smoked
-
4 twig Dill, fresh
-
2 pinch Salt, table
-
2 pinch Spices, pepper, white
Steps
-
Peel and finely chop the shallot. Rinse the dill sprigs under running water if necessary and dry them well. Then finely chop them. Cut the slices of smoked salmon into thinner strips, about 3 cm long.
-
Place a pot with a larger amount of water on the stove. Just before the water boils, salt it. Add the noodles to the boiling water and cook them for 1 minute less than indicated on the package.
-
Melt the butter in a pan. Add the shallot and sauté it slowly for 2 to 3 minutes, stirring occasionally, until it softens slightly. Pour 3 dl of cream over the sautéed shallot, then heat everything just below boiling point.
-
Drain the cooked noodles and toss them into the sauce. Add the remaining cream, the strips of smoked salmon, and the chopped dill. Season with pepper and salt to taste. Slowly cook the dish for another 1 to 2 minutes to thicken the sauce, then remove the pan from the heat and serve the noodles on plates.

Advice
Instead of fresh dill, you can also use dried dill, and the shallot can be replaced with a young onion.
