Tiramisu Muffins

Ingredients
Cream

200 ml Sweet cream

100 g Powdered sugar

pieces Vanilla, extract, natural

250 g Cheese, creamy

2 dl Water

3 spoons Coffee, espresso

2 piece Egg, fresh

225 g Sugar, white

150 ml Milk, whole milk

150 ml Oil, vegetable oil, canola

375 g Wheat flour, white, multi-purpose

1 bag Baking powder

pieces Cocoa, powdered, unsweetened

Brew coffee in hot water and let it cool, then mix in rum. Preheat the oven to 180 degrees Celsius. Place paper liners in the muffin tin.

Whisk the eggs until frothy and gradually add sugar, milk, and oil. Finally, add the flour mixed with baking powder. Quickly mix to form a uniform batter, filling the paper liners up to 3/4 full. Bake the muffins in the preheated oven for about 20 minutes. While still warm, drizzle them with the coffee mixture.

Whip the sweet cream with powdered sugar and bourbon vanilla seeds. Gently fold in the mascarpone. Transfer the cream to a piping bag and pipe it onto the cooled muffins. Finally, dust them with bitter cocoa powder.
