Steps

In a large bowl, mix the sparkling wine, sugar, and cinnamon. Wash the apples, peel them, and coarsely grate them. Add the grated apples to the bowl, mix everything well, and let it marinate for about 15 minutes.
-
Meanwhile, in a small pot, whisk the wine, sugar, and eggs to create a smooth cream. Add the cinnamon stick, lemon zest, and bay leaf, and heat the cream over low heat for about 15 minutes until it thickens slightly. Stir constantly while heating and make sure the cream does not boil. Strain the prepared cream and let it cool slowly. Stir it several times while cooling.
-
Slice the bread. Heat butter in a pan and toast the bread slices on both sides. Let the toasted bread cool on kitchen towels.
-
Arrange the toasted bread slices on plates, top with the marinated apples, and pour the cream over everything. Sprinkle the dessert with cinnamon and serve it warm.

Advice
It is best to use organic lemons, whose peel is not treated with pesticides. If organic lemons are not available, immerse the lemon in hot water for a few minutes, then wipe it well to remove the wax, which contains toxins.
