Tomato Salad with Pesto and Cheese
In the summer, we often dont feel like cooking, so we tend to reach for salads more frequently. To avoid always using the same ingredients, you can try something different. For example, you can mix sliced tomatoes with a delicious homemade pesto made from basil and sunflower seeds. To make the salad a bit more substantial and nutritious, add some cheese. You can use mozzarella or feta.

Ingredients

400 g Tomato, red

pieces Cheese, mozzarella
Pesto

50 g Seeds, sunflower, peeled, dried

pieces Basil, fresh

2 spoons Cheese, Parmesan, grated

1 pod Garlic, fresh

0.25 teaspoons Lemon zest, fresh

1 pinch Salt, table

1 pinch Spices, pepper, black

pieces Juice, lemon

50 ml Oil, olive

Pour the sunflower seeds into a pan and dry roast them over medium heat. Shake the pan several times while roasting to prevent the seeds from burning. Once they turn a light brown, transfer them to a bowl and let them cool.

Rinse the basil under running water and dry it well. Tear the leaves off the stems and add them to an electric chopper (blender). Add the peeled and roughly chopped garlic, 2/3 of the cooled roasted seeds, grated Parmesan, salt, and pepper. Grind the ingredients finely to achieve a pesto-like mixture, then transfer it to a bowl and mix with lemon juice and olive oil.

Wash the tomatoes and cut them in half. Place them in a large bowl and mix with the prepared pesto. If necessary, season the salad further (salt, pepper, olive oil, lemon juice). Finally, mix in the remaining 1/3 of the roasted sunflower seeds and sprinkle grated mozzarella on top. Alternatively, you can dice the mozzarella and mix it with the other ingredients.

Serve the prepared salad with bruschetta, bread, or toasted bread. If you're not eating it immediately, store it in the refrigerator until serving.
