Wash the cherry tomatoes and dry them thoroughly with paper towels. Using a sharp knife, cut off the tops and scoop out the seeds with a small spoon. Be careful not to damage the skin. Line a large plate or platter with paper towels and place the hollowed tomatoes on it (cut side down). Let the tomatoes drain for 30 minutes.

In a kitchen mixer, blend the diced avocado, cream cheese, pesto, and lemon juice into a smooth cream. Taste the cream and add salt and pepper as desired.

Transfer the prepared cream into a piping bag. Use a star-shaped nozzle and pipe the cream into the tomatoes, arranging them on a large plate or platter. The prepared snack can be served immediately or stored in the refrigerator and served once well chilled.
