Torta tenerina
Torta tenerina is a very special dessert, characteristic of the Italian city of Ferrara. It contains a lot of chocolate and is low and compact, with a soft and moist center, and a very thin and crispy crust on the outside. When serving, you can add a dollop of whipped cream or mascarpone.

Ingredients

200 g chocolate, dark

100 g Butter, unsalted

150 g Sugar, white

3 pieces Egg, fresh

30 ml Milk, whole milk

50 g Flour, Wheat, bread flour

Break or chop the chocolate into pieces. Melt it together with butter in a double boiler. While melting, gently stir it several times, and once it is completely melted and a smooth chocolate sauce is formed, set the bowl aside and let the chocolate cool to lukewarm.

Separate the egg whites and yolks into two bowls. Add half of the sugar to the yolks and beat them with an electric mixer until the mixture grows and forms a light, pale yellow cream.

Mix the cooled chocolate into the beaten yolks. Once a completely uniform mixture is achieved, stir in the milk and finally the sifted flour.

Beat the egg whites until soft peaks form, then gradually add the remaining sugar and continue beating until a firm and glossy meringue is formed. Gently and slowly fold the meringue into the chocolate mixture in two or three parts using a spatula.

Lightly grease the bottom of a round cake pan (23 to 25 centimeters in diameter, with a removable rim) with butter and line it with parchment paper. Pour the prepared mixture into it and smooth the top with a spatula. Bake the cake in an oven preheated to 180 degrees Celsius for 25 to 30 minutes. It is done when a crispy crust forms on top, and cracks may appear in some places. The center of the cake should still be soft and sticky, so be careful not to overbake it.

Once the cake is baked, remove it from the oven. Wait a few minutes, then carefully remove the rim and let the dessert cool before serving. Finally, dust the top with powdered sugar and cut into slices. Serve with whipped cream, fresh fruit, and/or mascarpone if desired.
