Tortellini with Cream and Ham
Store-bought tortellini, topped with a velvety cream sauce, enriched with pieces of fried ham or cooked prosciutto. This is the perfect meal for those days when you crave a good pasta dish but only have half an hour for lunch. Quick, filling, and delicious.

Ingredients

500 g Pasta, Macaroni, whole grain

1.5 spoons Oil, vegetable oil, canola

200 g Meat, pork, smoked ham

200 ml Soup base, chicken, cube

250 ml Sweet cream

80 g Cheese, Parmesan, hard

2 piece Egg, egg yolk, fresh

pieces Spices, pepper, black

pieces Parsley, fresh
Steps

Place a pot with a generous amount of salted water on the stove to boil the tortellini. While waiting for the water to boil, cut the cooked ham (or prosciutto) into pieces (you can also dice it). Grate the Parmesan finely.

Add the tortellini to the boiling water and cook them for the time indicated on the packaging.

Pour oil into a pan and fry the chopped ham. Fry it just enough to slightly brown and crisp the edges. Add the broth and use a spatula to scrape the bottom of the pan, releasing all the caramelized bits that formed during frying. Pour in the cream and let the sauce simmer for about 5 minutes.

Season the sauce with pepper and nutmeg. Add the drained tortellini and mix them well with the sauce.

Remove the pan from the heat and stir in the grated Parmesan and a beaten egg yolk. Return the pan to the stove and heat the dish over low heat while stirring, just until the velvety cream sauce nicely coats the tortellini. Be careful not to let the egg yolks curdle! Adjust the seasoning with salt to taste, and at the end, you can also mix in some chopped parsley.
