Tortellini with Ricotta-Herb Filling
The secret to good homemade tortellini lies in the thinly rolled dough and the delicious ricotta-herb filling, with the characteristic ring shape being the finishing touch. The contestants of the 4th season of Slovenia also tried their hand at making them, and their task was to prepare three perfectly shaped and equally sized tortellini for the judges.

550 g Wheat flour, white, multi-purpose

Steps

From egg yolks, flour, salt, and optionally a few drops of olive oil, knead a smooth egg dough. Wrap the prepared dough tightly in plastic wrap and let it rest in a cool place.

Meanwhile, prepare the filling. Press the ricotta through a sieve, add chopped herbs (to taste), grated hard cheese, and egg yolk, then season to taste. Mix the ingredients until smooth.

Roll the dough thinly and cut out circles. Place a hazelnut-sized dollop of filling in the center of each circle and lightly moisten the edges with water. Shape the tortellini and cook them in salted boiling water.
