Ingredients

Steps

Prepare a large bowl and crack 3 eggs into it. Add oil, 2 pinches of salt, and flour, then mix well. Place the mixture on a lightly floured work surface and knead all the ingredients into a smooth dough. Return it to the bowl, cover it with plastic wrap, and let it rest for about 30 minutes.

Clean, wash, and dry a young onion, then finely chop it. Peel and finely grate the ginger root. Peel the garlic and place it in a mortar, where you crush it with a pinch of salt. Drain the cooked shrimp and finely chop them.

Prepare a new bowl and add the garlic mixture and chopped shrimp. Crack a fourth egg into it and mix well. Season the mixture with soy sauce and add another pinch of salt if needed. Mix the ingredients thoroughly.

Roll out the dough on a floured surface to a thickness of 2 mm, then cut it into 5 cm squares using a pastry wheel. Place a teaspoon of shrimp filling on each square, then fold it into a triangle. Press the edges tightly together and shape the tortellini.

Shape the tortellini by wrapping each triangle around your thumb (or your pinky if you have thicker fingers). Seal both corners and press them together. Place a large pot of salted water on the stove and wait for it to boil. Add the prepared tortellini and cook for about 8 minutes.

Thoroughly wash the chili and bell pepper, cut them in half, and remove the seeds. Finely chop the chili and slice the bell pepper into very thin strips. Place a pan on the stove and heat it well, then add oil and heat it up.

Quickly sauté the bell pepper and chili in the oil, seasoning them with salt and pepper, and add a sprig of fresh thyme. Thoroughly drain the cooked tortellini and transfer them to a plate along with the vegetables, then serve to your guests.
