Tortillas with Ground Meat
Tortillas with a rich filling of ground meat, vegetables, and cheese. If you add a bit of ground chili to the sauce, youll get baked tortillas with chili con carne sauce. Serve them with a spoonful of sour cream and a large bowl of seasonal salad or salsa.

Ingredients

300 g Meat, beef, ground

1 spoon Tomato, concentrate

1 can Tomato, pieces - can

1 teaspoon Spices, paprika

0.5 teaspoons Spices, cumin, seeds

200 g Beans, grains, cooked

100 g Corn, yellow, in brine

1 piece Sour cream

2 dl Tomato sauce, without salt

200 g Cheese, Cheddar
Steps

Peel and finely chop the onion and garlic, and cut the bell pepper into smaller pieces.

Pour olive oil into a pot. Add the onion and sauté for two minutes until translucent. Stir in the bell pepper and garlic and sauté for another three minutes.

Increase the heat, add the ground meat, and cook for five minutes while stirring, until the meat is browned.

Add tomato paste, peeled tomatoes, paprika, and cumin. Stir and cook for 10 minutes. Add a bit of water if needed.

Finally, mix in the beans, corn, and half of the sour cream, and season with salt and pepper. Reserve the remaining sour cream for serving.

Lightly grease the bottom of a baking dish, measuring 30 x 25 centimeters, with a bit of tomato sauce.

Place a portion of the filling on each tortilla, then sprinkle with a bit of cheese.

Roll them up, place them in the baking dish with the folded side up, and secure with a toothpick.

Spread the remaining tomato sauce over the filled tortillas and sprinkle with the remaining cheese.

Cover the baking dish with foil and bake for 20 minutes at 180 degrees Celsius. Then remove the foil, increase the temperature to 200 degrees Celsius, and bake for another 10 minutes.

Let the baked tortillas cool slightly. When serving on plates, add a spoonful of sour cream to each.
