Tournedos on Toasted Bread
Tournedos are smaller steaks from the thinner part of the beef tenderloin, always served on a base and garnished with tender vegetables. They are 3 cm thick and weigh between 80 to 100 g.

Prepare a dark mushroom sauce: Place a deep pan on the stove and make a dark roux using fat and flour. Gradually add the stock while whisking well to avoid lumps. Season the sauce and simmer on low heat for 20 minutes. Meanwhile, clean the mushrooms and rinse them quickly. Slice them and cook in the sauce for the last 10 minutes. Finally, season the sauce with wine. Cook until the sauce thickens, then remove from heat.

Clean the green beans (trim the ends and remove any strings), rinse, and drain. Place them in a pot and add enough water to cover. Salt with a pinch of salt. Bring the pot to a boil, then reduce the heat and cook for 10 minutes. Drain the cooked beans and keep them warm.

Rinse the broccoli well and cut into smaller florets. Place them in a pot with water, add a pinch of salt, and bring to a boil. Once boiling, cook on moderate heat for 10 minutes. Drain the cooked broccoli and keep it warm.

Place a pan on the stove and heat it well. Shape the tournedos into rounds, coat them with oil, and sear on both sides like a steak; 5 minutes on each side. They should still be slightly pink inside. Then toast the bread slices in the same pan on both sides.

Season the cooked tournedos with salt and pepper. Place the toasted bread on a plate, top with the tournedos, and pour the mushroom sauce over them. Garnish the dish with the tender cooked vegetables. Serve the tournedos with a side of your choice and a salad.
