Thoroughly wash the zucchini and tomatoes and dry them with paper towels. Then slice the vegetables into 1 cm thick rounds, and the mozzarella into 0.5 cm thick slices.

Place a larger pan on the stove and heat it well. Once the pan is hot, arrange the zucchini rounds and cook them on each side until they lightly brown. Place the cooked zucchini in a baking dish, lightly salt them, and drizzle with olive oil. Wait for them to cool slightly.

Preheat the oven to 200 degrees Celsius. Assemble the towers by layering one zucchini round, a slice of mozzarella, another zucchini round, a tomato slice, another zucchini round, and a slice of mozzarella. Place the baking dish with the prepared towers in the preheated oven for 10 minutes to melt the cheese.

Arrange the prepared vegetable towers on plates and serve as a side dish or appetizer.
