Trganci with Sour Cream and Bacon

Ingredients
Dough

250 g Flour, Wheat, bread flour

0.25 teaspoons Salt, table

130 ml Water

100 g Meat, pork, smoked bacon

200 g Sour cream

Steps

First, prepare the dough for trganci. In a bowl, add flour and mix in salt. Pour in water and mix everything together with a spoon or by hand until the ingredients come together and form a rough dough. Then, knead it well on a clean work surface until it becomes smooth and elastic and doesn't stick to your hands (add a little more flour if needed). Shape the kneaded dough into a ball, place it in a bowl, and cover it with a clean cloth. Let the dough rest for 15 minutes.

Cut the bacon into pieces, strips, or slices and fry it until crispy in a heated pan. Remove the fried bacon from the pan and set it aside on a plate. Leave the pan with the fat rendered from the bacon for later use.

Roll out the dough on a lightly floured work surface to a thickness of 2-3 mm and cut it into strips about 2-3 cm wide.

Bring a large pot of salted water to a boil. Tear the dough strips into pieces and add them to the boiling water. Once the trganci float to the surface, cook them for another 5-8 minutes.

Place the pan used for frying the bacon back on the stove. Once the trganci are cooked, remove them from the pot with a slotted spoon and add them to the pan. First, mix them well to coat them with the fat, then mix in the sour cream. Add a little of the cooking water from the trganci. Season with salt and/or pepper to taste and briefly cook everything together.

Serve the prepared trganci on plates and sprinkle the fried bacon on top. Serve the dish immediately.

Advice
If you want a thicker and creamier sauce, you can add about 200 g of cream cheese along with the sour cream.
