Trifle with Cottage Cheese and Coffee Cream
Trifle is an English dessert usually served during Christmas or New Year. Since it doesnt require an oven, its also popular as a summer treat. It consists of layers of cream, fruit, and alcohol-soaked sponge cake or biscuits, and is typically served in a large glass bowl or individual glasses to make it visually impressive. It can be enhanced with alcohol, grated chocolate, or chopped nuts, and the most important thing is to enjoy it with great pleasure.

Ingredients
Coffee cream

100 ml Sweet cream

1 spoon Coffee, espresso

200 g Sugar, white

Steps

In a small pot, heat the cream and dissolve the coffee in it (be careful not to let the cream boil). Pour the sugar into a heavy-bottomed pan and slowly heat it over medium heat. When it starts to melt, stir it with a spoon and lightly caramelize it. Add the salt and remove the pan from the heat.

Pour the hot coffee cream into the caramel, being careful not to get burned by the hot liquid. Return the pan to the stove and heat the mixture until the caramel is completely dissolved. Pour the cream into a bowl and let it cool to room temperature, stirring occasionally. Then, refrigerate the bowl and once the cream starts to set, remove it from the fridge.

Soak the gelatin in cold water. Let it sit for 10 minutes until the sheets soften. In a bowl, mix the sugar, cottage cheese, and mascarpone until smooth. Drain the soaked gelatin sheets and add them to a small pot with one or two tablespoons of water to dissolve. Mix the melted gelatin into the cottage cheese mixture.

In the glasses where you will serve the dessert, layer the light and dark cream. Finish with the light cream on top. Refrigerate the glasses to allow both creams to cool and set. Before serving, garnish with grated chocolate and banana slices. Serve with baby biscuits or savoiardi cookies.
