Tsukimi Soba (Moonlight Soup)
The word Tsukimi or Otsukimi translates to moon viewing. The name refers to a Japanese festival where the autumn moon is celebrated, and this dish is widely sold or prepared.

340 g Pasta, soba noodles

4 pieces Egg, fresh

1 piece Onion, young

80 ml Soy sauce, shoyu

1.5 l Soup base, chicken, cube

Steps

Place a large pot of salted water on the stove and bring it to a boil. Add the soba noodles to the boiling water and cook them on high heat for 7 minutes. Remove the pot from the heat and drain the noodles well. Divide them into 4 bowls.

Peel, wash, and finely chop the onion. Place a larger pot on the stove and add the dashi soup base, soy sauce, mirin, and salt. Mix well and let the soup come to a boil. Then reduce the heat and cook for another 2 minutes. Remove the pot from the heat.

Sprinkle the chopped onion over the soba noodles and pour the soup over them. Carefully crack one egg into each bowl. Serve the prepared soup.

Advice
Prepare the dashi soup base by dissolving 2 teaspoons of dashi powder in 1.5 liters of water. The dashi soup base can also be replaced with a vegetable soup base.
