Tumbet is a traditional dish from Mallorca, available in almost all restaurants on the island. This recipe will prepare the dish just as the locals do.

Ingredients

2 piece Eggplant, raw

3 pieces Potatoes, white

3 pieces Bell pepper, red, fresh

1 piece Onion, raw

4 pieces Tomato, red

100 g Wheat flour, white, multi-purpose

0.5 teaspoons Salt, table

Steps

Wash the eggplants, potatoes, tomatoes, and peppers thoroughly. Peel the potatoes, wash them again, and slice them into 5 mm thick slices. Clean the eggplants and cut them into 1 cm thick slices. Remove the seeds from the peppers and cut them into thin strips. Peel the onion, wash it, and finely chop it.

Coat the eggplant slices in flour, shake off the excess flour, and place them on a plate. Heat oil well in a pan and quickly fry the eggplant slices. Be careful not to let them brown! Transfer the fried slices to paper towels to absorb excess oil. Quickly fry the potatoes and peppers in the oil as well, then drain them on paper towels.

Clean the tomatoes and cut them into larger cubes. In a new pan, heat a little oil and sauté the onion until it turns golden. Then add the tomatoes, stir, salt, and cook covered over moderate heat until the tomatoes completely dissolve and form a thick sauce.

Preheat the oven to 190 °C. In an ovenproof dish, layer the potatoes, eggplant slices, and pepper strips. Pour the tomato sauce over everything. Place the dish in the preheated oven and bake for 30 minutes. Be careful not to let the sauce on top burn too much.

Remove the baked dish from the oven, serve it on plates, and enjoy it while still warm.
