1 teaspoon Oil, plant, sunflower
-
1 spoon Tomato, concentrate
-
8 pieces Olives, black, in brine

1 piece Chili peppers, green chili, fresh
-
0.5 piece Bell pepper, green, fresh

2 piece Fish, tuna, in oil
-
200 g Cheese, cottage cheese
-
1 piece Egg, fresh
-
200 g Cheese, Cheddar
-
4 pieces Tortilla, wheat
Steps
-
Wash the tomato, green bell pepper, and chili, then dry them with a kitchen towel. Cut the bell pepper and chili in half and remove the seeds. Use half of the bell pepper, cutting it into small pieces, while slicing the entire chili into rings. Blanch the tomato in boiling water for a few minutes, then remove the skin. Mince the garlic and onion, and slice the olives into rings. Grate the cheddar and cut the tortillas into strips.
-
Heat oil in a pan and add the garlic and onion. Stir over medium heat until the onion softens. Add the tomato, tomato paste, olives, chili, green bell pepper, coriander, and cumin. Cover and bring to a boil, letting it simmer until the mixture thickens (15 minutes). Add the tuna and mix well.
-
Preheat the oven to 180 degrees Celsius. In a bowl, mix the egg and cottage cheese. Pour half of the tomato mixture into a baking dish and sprinkle with half of the grated cheese. Pour the egg and cottage cheese mixture over it, then layer the tortilla strips on top. Spoon the remaining tomato mixture over the tortilla strips and cover with the remaining cheese. Bake for 30 minutes until the cheese turns golden brown.
