4 pieces Fish, Tuna, yellowtail

40 g Honey

2 piece Onion, young

0.5 dl Vinegar, balsamic

1 dl Soy sauce, tamari

0.5 dl Oil, sesame

1 piece Ginger, fresh

1 twig Lemongrass

1 bouquet Coriander, leaves, fresh

1 pinch Spices, chili powder

Steps

Finely chop the lemongrass, peel and finely chop the young onion, and grate the ginger. Rub these ingredients thoroughly onto the tuna fillets, which have been previously washed.

Mix honey, balsamic vinegar, soy sauce, ground chili, sesame oil, and chopped cilantro to create a marinade. Pour it over the tuna fillets. Cover and marinate for two hours.

Heat a bit of oil in a pan on the stove. Drain the fillets and sear them. Cook for only two to three minutes on each side to prevent them from becoming dry and tough.

Serve the seared fillets on plates or a platter. In the same pan, bring the remaining marinade to a boil, simmer it slightly, season with salt, and pour it over the fillets.
