Tuna Patties with Potatoes and Corn
Delicious and filling, crispy on the outside, soft and tender on the inside - all this and more are the tuna patties with potatoes and corn, which can be made for lunch, a picnic, or a party. Serve them with a large bowl of salad and various dips, which we will happily dip them into.

Steps

Scrub the unpeeled potatoes and wash them thoroughly under running water. Place them in a large pot and cover with enough cold water to fully submerge them. Salt the water and bring it to a boil, then reduce the heat and cook the potatoes covered for about 25 minutes. They are done when a thin knife can be easily inserted. Drain the cooked potatoes and let them cool.

While the potatoes are cooling, prepare the other ingredients. Drain the corn in a colander, rinse under running water, and drain well. Clean the spring onion, wash it, and finely chop it. Drain the excess oil from the can of tuna and flake it with a fork.

Peel the cooled potatoes and cut them into larger pieces, then mash them smoothly in a bowl using a potato masher. Add the tuna and mix well with a spoon or spatula. Then add the corn, spring onion, beaten egg, and breadcrumbs to the bowl. Season with pepper and salt to taste and mix everything well to form a uniform mixture.

Divide the mixture into 12 portions, and with wet hands, shape them into patties, coating them in breadcrumbs on both sides.

Heat oil in a pan and fry the patties. Cook them in batches, frying each side for about 3 minutes. Place the cooked patties on a plate lined with paper towels.

Serve the patties on plates. Accompany them with a salad and offer various dips on the side.

Advice
The patties can also be baked in the oven, preheated to 200 degrees Celsius. Place them on a baking sheet lined with parchment paper and bake until they are nicely browned on both sides. Flip them during baking.
