Tuna Sashimi on a Bed of Sprouts

0.3 dl Soy sauce, shoyu

0.3 dl Vinegar, apple

1 spoon Soup base, chicken, cube

5 ml Oil, sesame

150 g Fish, Tuna, yellowtail

0.25 teaspoons Wasabi

pieces Seaweed, wakame, dried

pieces Chili peppers, red chili, fresh

pieces Thyme, raw

pieces Sesame seeds, roasted

5 ml Vinegar, balsamic

35 g Radish, sprouts

Prepare the marinade. In a small bowl, mix soy sauce, mirin, and fish stock. Quickly bring the mixture to a boil and let it cool. Add sesame oil and mix well.

Slice the tuna into very thin pieces, about 2 to 3 millimeters thick, to create slices, and dry them on a paper towel. Marinate them in the prepared marinade for about 20 minutes. A few minutes before the marinating time is up, mix in the wasabi.

Cut the seaweed into thin, not too long strips, and chop the chili and chives into small pieces.

On the plate where you will serve the dish, create a bed of sprouts and arrange the marinated fish slices on top. Sprinkle with chopped seaweed, chives, chili, and sesame seeds.
