Turkey Cutlets in Mustard Cream Sauce
When we dont have much time to prepare cutlets in a sauce, chicken or turkey cutlets are an excellent choice because they dont require long cooking to become tender. After browning them, we quickly prepare a sauce from mustard and cream in the pan. Numerous side dishes pair well with these cutlets in sauce, from mashed potatoes to fried croquettes or bread dumplings.

Ingredients

500 g Meat, turkey, breasts

pieces Salt, table

3 spoons Oil, vegetable oil, canola

1 piece Shallot

1 pod Garlic, fresh

150 ml Soup base, chicken, cube

2 dl Sweet cream

2 teaspoons Mustard

1 handful Parsley, fresh
Steps

Gently pound the turkey cutlets if desired, then lightly salt and pepper them on both sides. Peel the shallot and garlic, and finely chop them separately.

Heat two tablespoons of oil in a pan and brown the seasoned cutlets. Once they are golden brown on both sides, remove them from the pan and keep them warm on a plate.

Pour the remaining oil into the pan and, once heated, add the chopped shallot. Sauté it over medium heat for about 3 minutes, stirring until softened, then add the chopped garlic and cook for another 30 seconds.

Pour the broth into the pan and use a spatula to scrape the bottom well, loosening all the caramelized bits that formed during cooking. Increase the heat and simmer for about 5 minutes until the sauce reduces by half.

Mix the mustard and cream together until smooth, then stir into the sauce. Add the chopped parsley and season the sauce to taste with pepper and/or salt.

Return the browned cutlets to the sauce along with any juices that have collected on the plate. Simmer everything together over medium heat for another 3 minutes, then remove the pan from the heat and serve the cutlets with the sauce and your chosen side dish on plates. Serve the prepared dish.
