Turkey Cutlets in Natural Sauce
A typical Slovenian lunch, besides beef soup, includes various cutlets in sauce. This time, I prepared a very quick, simple, and tasty recipe for turkey cutlets in a natural sauce. For the side dish, you can serve rice, potatoes, couscous, gnocchi, pasta, or whatever you have on hand.

Ingredients
-
pieces Meat, turkey, breasts
-
pieces Salt, table
-
2 spoons Oil, olive
-
0.5 spoons Butter, unsalted
-
1 spoon Wheat flour, white, multi-purpose
-
0.5 l Soup base, beef, cube
Steps
-
Lightly pound the cutlets on both sides, then season them with salt and pepper.
-
Pour oil into the pan where you will cook the cutlets and add butter. Wait for the fat to heat up, then place the cutlets in the pan and brown them golden on both sides.
-
Remove the browned cutlets from the pan and set them aside on a plate. In the fat used for cooking the cutlets, sprinkle a bit of flour and lightly fry it (as for a roux). Pour in the broth base.
-
Stir well with a whisk to ensure there are no lumps in the sauce, then return the cutlets to the pan along with any juices that have been released from the meat while resting. Cook the cutlets on low heat until the sauce thickens appropriately. If needed, adjust the taste with additional salt and/or pepper.
-
Serve the prepared cutlets on plates. I served them with spicy vegetable rice.
